How to Make Snickerdoodle Muffins
  1. Preheat oven to 350°F (175°C). Prepare a muffin tin with liners or grease the cups.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, salt, and cream of tartar until well combined.
  3. In another bowl, whisk together milk, egg, melted butter, and vanilla extract until smooth.
  4. Gently fold wet ingredients into dry ingredients until just combined; do not overmix.
  5. In a small bowl, mix together the granulated sugar and ground cinnamon for topping.
  6. Spoon batter into muffin cups about ⅔ full, then sprinkle cinnamon-sugar mixture on top.
  7. Bake for 20–24 minutes, or until a toothpick inserted in the center comes out with a few crumbs.
  8. Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
