- Preheat the oven to 350°F (175°C) and grease a large baking dish.
- In a skillet over medium heat, brown the breakfast sausage for about 5-7 minutes.
- In a large bowl, whisk together the eggs and milk until well combined. Then, stir in the cooked sausage, bell peppers or spinach, and half of the cheese.
- Gently fold in the torn bread pieces until they’re fully coated in the egg mixture.
- Pour the mixture into the greased baking dish and sprinkle the remaining cheese on top. Bake for 30-35 minutes.
- Once baked, allow the casserole to cool slightly before slicing into squares.
