  • 2 cups bell peppers chopped, mixed colors suggested
  • 1 medium onion diced
  • 2 cloves garlic minced
For the Creaminess
  • 2 cups shredded cheddar cheese or a mix of cheeses
  • 1 cup sour cream for serving, Greek yogurt as substitute

Cooking Steps
  1. Chop veggies: Start by dicing the onion, mincing the garlic, and chopping the bell peppers.
  2. Boil pasta: In a large pot, bring water to a boil. Cook the rotini until al dente, about 8-10 minutes. Drain and set aside.
  3. Sauté aromatics: In a skillet, cook the onions and garlic until translucent, about 3-4 minutes.
  4. Brown the meat: Add ground beef (or turkey) to the skillet, breaking it up until browned, about 5-6 minutes.
  5. Add bell peppers: Stir in chopped bell peppers and taco seasoning, sautéing for an additional 3-4 minutes.
  6. Combine ingredients: Mix in black beans, diced tomatoes, cooked pasta, and half the cheddar cheese. Heat through, about 3-5 minutes.
  7. Melt cheese: Top with remaining cheddar cheese, cover, and cook on low until melted, about 3 minutes. Serve with sour cream.
